Butternut Squash Soup to Impress

I absolutely love this soup.

It is hearty enough to keep you warm and satisfied, on a cozy winter afternoon, but also super easy to whip up, in case you want to impress a few guests.

The best part is that it’s actually super super shmooper nutritious (You’re a Schmoopie!! Name the TV series!). The main ingredient are all fruits and vegetables, after all, not to mention the star of the show, the butternut squash.

Butternut squash is LOADED with antioxidants, you see. And by the way, I couldn’t believe it when I first read it either, but butternut squash is technically a fruit!

I won’t keep ya waiting. I know what it’s like to salivate over a dish and want to get to the gist of how to make it.

So without further ado, here’s how it gets whipped together.

 

 

Butternut Squash Soup

 

Ingredients

    • 1-2 tablespoons extra virgin olive oil
    • 1 large yellow onion, diced
    • 1 tsp kosher salt (omit if you’re hypertensive)
    • 2 1/2 – 3 pounds of butternut squash, peeled and cubed
    • herbs – I use a mix of chopped fresh rosemary (1/2 tbsp), chopped sage (1 tbsp) thyme (1/2 tbsp), +/- fresh grated ginger (1 tsp)
    • 4 garlic cloves, chopped
    • Chicken or veggie broth, 3 cups
    • Fresh ground pepper, to taste

 

Instructions

  • Heat the EVOO in a large pot over medium heat (I use a cast iron dutch oven and have added the link to one, if you need to quickly order it).
  • Add the onion, salt, and some fresh pepper and sauté around 5 minutes, until it gets soft.
  • Add the squash. Stir occasionally, cooking for about 8 minutes, until it gets a bit softer.
  • Add the garlic and herbs of your choice, or all of them: sage, rosemary, thyme, and ginger. Stir for 30 seconds
  • Add the broth of your choice. Bring to a boil, cover, and reduce heat to a simmer. Cook until squash is tender, around 30 minutes.
  • Let the soup cool slightly and then blend until smooth. I use an immersion blender, but you can also use a standing blender.
  • Season to taste and serve with chopped fresh parsley and a french baguette bread (if you wanna be fancy).
