Whenever I make my rotisserie chicken (I love making roast chicken and will share my tried-and-true recipe one of these days), and I have leftovers the next day, I like to use them up in burritos.
This time around, I sliced up chicken chunks and heated them up,
then laid them atop a TJ’s tortilla smeared with Sriracha Barbecue sauce (I love this sauce and use it as a side to roasted potatoes!).
Instead of plain lettuce as a condiment, I varied things up and used a Caesar salad (an easy fresh mix, from TJs too! I’ll make a post about this because it’s so ridiculously easy and it’s so delicious.) to top the chicken,
followed by sliced tomatoes.
One of my children had about 6 of these. In case any of you wanted to know how it tastes.
