Crunchy Mint-Watermelon Salad 

In exploring the tastes of summer, I came across this absolute must-make starter to any (and every) summertime meal.

I find that the crunch of the almonds make this dish especially memorable, and whenever you bring it to anyone’s home, they’ll ask you what’s in it, or how it was made. Guaranteed.

The best part?

It takes all of 10 minutes to make.

I like to leave the salad in its individual layers, and then mix everything up right before serving.

This way, nothing gets soggy, and every ingredient can be appreciated as is.

 

Ingredients:

– 1 watermelon, diced into 1/2 inch cubes

– 1/3-1/2 cup crumbled feta cheese

– 1/2 cup chopped mint

– 1/2 cup chopped roasted, salted almonds

– 1 lemon

– Maldon salt

 

Directions:

Cut up the watermelon into 1/2 inch cubes. 

Add the feta, mint, almonds, and juice of 1 lemon.

Top off with Malden salt for finish.
