Roasting Asparagus with Children

(it’s easy-peasy and it’s healthy-shmelthy, too)

 

I don’t think there’s a person alive today that would argue that asparagus isn’t a healthy superfood.

Because it is.

And it’s so dang delish on roasting. Not to mention easy to prepare.

But you know what’s even better than roasting asparagus?

Roasting asparagus with children.

Because nothing gives a parent greater pleasure than watching their child get set for future success. And pave the way to good health.

 

Among the list of vitamins and minerals that this green vegetable contains are:

 

Vitamin K, vitamin B1, vitamin B2, vitamin C, and vitamin E, copper, selenium, folic acid, dietary fiber, manganese, phosphorus, vitamin B3, potassium, choline, vitamin A, zinc, iron, protein, vitamin B6, and pantothenic acid.

 

It also happens to be one of the best-tasting side dishes! Oh, and so easy to make.

So easy your kids can make it.

Here’s the scoop. Buy a batch of asparagus. Go wild and buy two.

 

 

 

 

Roasting Asparagus with Children.

Here’s how I Prepare Them.

 

 

Spread the batch out on a parchment-lined pan after washing them and cutting off their ends

(I cut off the bottom inch, but sometimes I just snap the ends off as they’re supposed to break off easily).

Spread olive oil over the top of the asparagus, then add minced garlic.

 

I use a garlic mincer because it turns pieces into paste and you can add a large amount of garlic to the top quickly.

Plus you give a workout for those teenie hands.

Feel free to add more garlic, as needed.

Your children will take delight in helping squeeze that mincer, or finishing off the preparation with the following easy steps:

Sprinkle salt and pepper on top and toss.

Then, it’s into the oven for 20 minutes (with another toss halfway through, to spread around the goodies), roasted to softness.

A squeeze of lemon once out of the oven and they’re ready to pop in your mouth.

 

When you’re finished roasting that asparagus with your children the first time around, you’ll wonder why you never did it before.
