Tetris Parmesan-Crusted Potatoes

This is a great side dish that’s super easy to prepare and bakes for 30 minutes.

 

INGREDIENTS:

Bag of small potatoes, cut in 1/2 longwise (how many will depend on how many fit into your baking pan)
Parmesan, grated – enough to cover bottom
1 tsp Smoked paprika (can swap with others herbs, like oregano or garlic powder)
Extra Virgin Olive Oil – 3 tbsp or so
Salt and pepper to taste

 

PREPARATION”

Preheat oven to 400 F.
Oil the bottom of a pan & generously sprinkle Parmesan on top. Add sprinkled smoked paprika or other seasoning of choice.
Lay potatoes down, cut side down, and fit them as close together as possible (Tetris skills uplevel!). Add a sprinkle of olive oil on top and salt and pepper to taste.
Bake for 25-30 minutes, until golden.
